Lemon Energy Balls
Easy NO BAKE energy balls made with sweet dates and fresh lemon zest. The perfect gluten free treat to have on hand for busy days!
- 6 medjool dates pitted
- 2 tablespoons coconut butter
- 1 tablespoon coconut flour
- 1 tablespoon coconut flakes
- 2 tablespoons rolled oats
- 1 teaspoon chia seeds
- 1 teaspoon hemp seeds
- 1 teaspoon lemon juice
Coating
- 2 teaspoons coconut flakes
- 1 teaspoon lemon zest
- 1 teaspoon chia seeds
In a food processor, add dates and pulse for a few seconds.
Next add in all ingredients except the “coating” ingredients.
Pulse for a few seconds until well combined.
Use a tablespoon measure to make and roll out about 6 energy balls.
Combine the “Coating” ingredients in a small bowl.
Roll date balls into the coating one by one.
Refrigerate energy balls at least l hour for harder consistency.
Best kept refrigerated in an airtight container for up to 7 days.
