Lemon Coconut Energy Balls
Hi Friends!
Okay so quick question. Am I the only one obsessed with energy balls lately? ! No bake protein balls, bliss balls, etc. I’ve heard a couple fun names but you get the idea. They’re all so great ! These are the perfect sweet treats to keep in the fridge because they’re individual which makes it easy to grab on the go. The lemon zest gives them a great tang to offset the sweetness of the Medjool Dates. I love a balance with my sweets which is why I usually sprinkle sea salt into all my dessert recipes so feel free to do the same !
Lemon is definitely NOT my go to for sweets but sometimes it just comes out being exactly what you needed. Give these a try and let me know what you think. Please Enjoy!

Lemon Energy Balls
Easy NO BAKE energy balls made with sweet dates and fresh lemon zest. The perfect gluten free treat to have on hand for busy days!
Ingredients
- 6 medjool dates pitted
- 2 tablespoons coconut butter
- 1 tablespoon coconut flour
- 1 tablespoon coconut flakes
- 2 tablespoons rolled oats
- 1 teaspoon chia seeds
- 1 teaspoon hemp seeds
- 1 teaspoon lemon juice
Coating
- 2 teaspoons coconut flakes
- 1 teaspoon lemon zest
- 1 teaspoon chia seeds
Instructions
- In a food processor, add dates and pulse for a few seconds.
- Next add in all ingredients except the “coating” ingredients.
- Pulse for a few seconds until well combined.
- Use a tablespoon measure to make and roll out about 6 energy balls.
- Combine the “Coating” ingredients in a small bowl.
- Roll date balls into the coating one by one.
- Refrigerate energy balls at least l hour for harder consistency.
- Best kept refrigerated in an airtight container for up to 7 days.
