Mango Salsa

Hi Friends!

Grilling Season is almost here! People in Chicago take summer VERY seriously! I mean, do you blame us ? We have months and months of snow and cold weather. Oh, I am getting off topic and having some unhappy memories of snow storms but anyways. I am soooooo glad it’s sunny and warm. I have the best memories of family gatherings and my Dad on the grill. This year is my first summer back in Chicago since the move so to say i’m excited would be an understatement!

This Mango Salsa is the perfect addition to the Grilling Menu! It’s quick, fresh and goes well with all things grilled.

Can I tell you what I had for lunch the past 3 days? You guessed it….Mango Salsa. Well, more like Grilled Chicken with Mango Salsa, Salad with Mango Salsa, Nachos with Mango Salsa, Rice with Mango Salsa….. Okay okay, you get it. I’m obsessed. This recipe was actually inspired by my Grandma ( Hi Sweetie ) because she’s been making Mango Salsa and Mango Salad during Quarantine ( Spring 2020 ). Our family group chat has become a friendly food competition and it has been so much fun!! Please Enjoy!

Mango Salsa

A simple and delicious salsa made with fresh mango
Prep Time 10 minutes
Course Side Dish
Servings 3

Ingredients
  

  • 1 mango tart or semi-sweet
  • 1/2 cup tomato diced
  • 1/3 cup red onion diced
  • 1/3 cup cilantro chopped
  • 1/2 jalapeño diced
  • 3 tablespoons lime juice freshly squeezed
  • Salt & Black Pepper to taste

Instructions
 

  • In a bowl, add all the ingredients and combine
  • Sprinkle with Salt and Pepper to taste
  • Serve immediately or store in the fridge for 4-5 days
