Two Layer Chocolate Krispie Treats
Nut Free, Vegan, Gluten Free
Hi Friends!
A couple months back I made these heart shaped treats for Valentines day and they came out SO GOOD! I had a fun little heart shaped mold around so I used that but you can use a plain cupcake mold or even make these into bars ! I used sunbutter , which made this recipe completely NUT FREE. I tried a couple nut free spreads before I found sunbutter and it is by far the best tasting alternative out there. I also added some great seeds in this recipe and you totally cant tell the difference. Perfect for the kiddos!
These treats will also be a great dessert idea for your lunchbox or even a school event. Most schools prefer NUT FREE treats so these fit right in. Keep them in the fridge for about a week to keep them fresh. Please Enjoy!
Love,
Erika
Two Layer Chocolate Krispie Treats
Ingredients
- 8 medjool dates
- 2 tablespoons sunbutter
- 1 teaspoon coconut oil
- 1/2 tablespoon chia seeds
- 1/2 tablespoon hemp seeds
- 1/2 tablespoon ground flaxseeds
- 1 tablespoon pumpkin seeds
- 2 tablespoons coconut flour
- Sea Salt Flakes
Chocolate Layer
- 1/2 cup dark chocolate chopped
- 1/2 tablespoon coconut oil
- 1/2 cup rice krispies
Instructions
- In a food processor, add in dates, sunbutter, coconut oil, coconut flour, and all seeds. Pulse until well combined.
- Press lightly into desired silicone molds and refrigerate while you make the next layer. If making into bars , use loaf pan with parchment paper.
- Melt dark chocolate and coconut oil in a saucepan over low heat. You can also use the double-boiler method or the microwave ! Melt about 85% of the chocolate chips and keep stirring ( off the heat ) until all chocolate chips are fully melted. This will help with how the chocolate sets!
- Once chocolate is melted, add in rice krispies and stir until combined.
- Pour into silicone molds ( or loaf pan ) over date layer and refrigerate/ freeze for at least 35 minutes.
- Sprinkle with sea salt flakes
If making these into bars, use a loaf pan for the best results!
