Oven Roasted Maple Rosemary Carrots

I’m so happy you’re here ! I have the PERFECT side dish for you this Holiday Season! I know the Holidays look a little different this year but I am so thankful to be surrounded by family. I really wanted this recipe to be a smaller serving to accommodate those with smaller gatherings. This recipe serves about 2-4 people but can totally be doubled for larger families !

Maple Rosemary Carrots
Ingredients
- 4-5 carrots
- 2 tablespoons maple syrup
- 1 tablespoon avocado oil
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 1 sprig rosemary
- 1 minced garlic clove
- 1 lemon slice
Instructions
- Preheat oven to 425 degrees
- Prepare a greased or non stick baking pan
- Wash, peel, and slice carrots into 1/4 thick pennies (slices)
- In a small bowl combine all the ingredients except the lemon slice
- Stir to coat all the carrots in mixture
- Pour carrots onto prepared sheet pan and roast in the oven for about 20 minutes until roasty ( thats a word right ? ) and tender
- Squeeze lemon on top when carrots are done and out of the oven
