Oven Roasted Maple Rosemary Carrots

I’m so happy you’re here ! I have the PERFECT side dish for you this Holiday Season! I know the Holidays look a little different this year but I am so thankful to be surrounded by family.  I really wanted this recipe to be a smaller serving to accommodate those with smaller gatherings. This recipe serves about 2-4 people but can totally be doubled for larger families !

MERRY Christmas and HAPPY Holidays !! This is my first Christmas back in Chicago in about 4 years so I am sooooooo very excited. YES! I moved back to Chicago from Florida !! Maple Rosemary Carrots

Delicious OVEN ROASTED Maple glazed Carrots with fresh Rosemary
Prep Time 5 minutes
Course Side Dish
Servings 4

Ingredients
  

  • 4-5 carrots
  • 2 tablespoons maple syrup
  • 1 tablespoon avocado oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1 sprig rosemary
  • 1 minced garlic clove
  • 1 lemon slice

Instructions
 

  • Preheat oven to 425 degrees
  • Prepare a greased or non stick baking pan
  • Wash, peel, and slice carrots into 1/4 thick pennies (slices)
  • In a small bowl combine all the ingredients except the lemon slice
  • Stir to coat all the carrots in mixture
  • Pour carrots onto prepared sheet pan and roast in the oven for about 20 minutes until roasty ( thats a word right ? ) and tender
  • Squeeze lemon on top when carrots are done and out of the oven
